With Mandy Sacher of Wholesome Child‘s apricot and coconut bliss balls recipe, you will be able to still achieve your goals and enjoy a tasty afternoon snack. They’re also vegan, gluten free and nut free!

Serves: 10-12
Ingredients
1 cup (200g) dried apricots, sulphur-free
1 cup (80g) desiccated coconut
1 cup (120g) seed meal
1 tbs chia seeds
1 tsp vanilla extract or powder
1 tbs coconut oil, melted
1 cup (80g) desiccated coconut, for rolling
Method
Place all ingredients into a high-speed food processor and process until everything is well combined and a dough is formed.
Roll mixture into tablespoon-sized balls and roll in desiccated coconut.
Place in the fridge to set or eat straight away.
Serving and storing leftovers
Serve immediately, store in an airtight container in the fridge for up to 4 days or freeze for up to 4 months.
