Berry Soufflé Omelette
Serves: 2
Time: 15 minutes
Ingredients
4 eggs, yolk and whites separated
1 tbsp honey
1 tbsp coconut oil
¼ cup berry, puree
2 tbsp coconut milk
½ cup fresh berries, sliced
Yoghurt, to serve
Method
Preheat oven to 180°C.
In a bowl whisk together the egg yolks, honey, berry purée and coconut milk.
In another bowl or jug beat or blend the egg whites until stiff peaks form.
Gently fold the egg whites into the egg yolk mix until well combined.
Heat coconut oil in a frying pan over medium heat, pour mixture into the pan and place fresh berries on top and place into a preheated oven at 180°C for 10-15 minutes.
Serve immediately with full cream yoghurt.
Healthy Cacao and Orange Granola Parfait
Serves: 2
Time: 25 minutes
Ingredients
200g natural yoghurt
1 orange, cut into thin segments
Squeeze of orange juice
1-2 tsp golden flax flakes
Granola
¾ cup quinoa flakes
¼ cup slivered almonds
1 cup flaked coconut
¼ cup sunflower seeds/kernels
1 tbsp sesame seeds
2-4 tbsp coconut oil, melted + more if needed
½ tsp pure vanilla bean extract
1 tbsp honey
1-2 tbsp cacao powder
1 tbsp orange zest
Method
Preheat the oven to 150°C and line a tray with baking paper. In a bowl combine all of the dry granola ingredients and mix well. In a small jug whisk together coconut oil, honey, orange zest and vanilla. Add the wet mix to the dry and coat dry mix evenly.
Spread the granola over the tray evenly. Bake for 12-15 minutes until the texture is crunchy, making sure to toss every 5mins. Cool granola mixture on the oven tray. Mix the yoghurt, orange segments, a little orange juice and a sprinkle of golden flax flakes. To assemble the parfait, layer granola, yoghurt mixture in a parfait glass.
Healthy Banana French Toast
Serves: 2
Time: 15 minutes
Ingredients
4-6 slices of rice bread or wheat-free bread
2-4 eggs
1 tbsp honey
¼ tsp of nutmeg
½ tsp cinnamon
1 banana
Olive oil spray
Method
Preheat the oven to 180C.
Mix the eggs, cinnamon and nutmeg together in a mixing bowl.
Dip the bread into the egg mixture and place on an oil sprayed baking tray.
Top with sliced banana and drizzle with a little honey and place in the oven for 10 minutes or
until golden brown on top.
Serve warm with a cup of herbal tea.
