Mediterranean Eggs Recipe
Take note: cracking an egg and slapping some bacon into a frying pan does not a mother’s day breakfast make. When it comes to the woman who has given your all, a little more love had best go into an A.M. feed. Consider this healthy and flavoursome Mediterranean Eggs recipe your ticket to favourite child status.
Serves: 4
Prep time: 5 minutes
Cooking time: 15-17 minutes
Ingredients:
2 tsp olive oil
1 small red onion, finely diced
½ cup red capsicum, chopped
½ zucchini, chopped
½ cup baby spinach leaves, finely sliced
4 large eggs
1 small handful parsley, roughly chopped, keep 4 sprigs to garnish
Worcestershire sauce, to taste
Method:
- Sauté the onion and capsicum with oil over low heat for 10 minutes. Add the zucchini and spinach, sauté for 2-3 minutes.
- Meanwhile, beat the eggs with the parsley, Worcestershire sauce and freshly cracked black pepper to taste.
- Drain any excess liquid from the vegetables, then pour the egg mixture over the top and stir with a wooden spoon until egg is cooked.
- Serve over toasted multigrain bread and top with a sprig of fresh parsley.

Vegan Chocolate Pikelets with Chocolate Topping Recipe
If yours is a mum with a sweet tooth, indulge her with this beyond delicious stack of chocolatey pikelets with chocolate topping. We can’t promise it will erase all those sleepless nights and teenage tantrums, but it just might take the edge off. Especially if you team it with one of these Mother’s Day beauty gifts!

Cooking Time: 10 minutes
Ingredients:
Pikelets:
- 1 cup Vitasoy Soy Milky Lite
- 1/4 cup water
- 1 cup self-raising flour
- 1 tablespoon corn flour
- 1 tablespoon sugar
- dash vanilla
- 2 tablespoons cocoa
Topping Ingredients:
- 2 tablespoons cocoa
- 2 tablespoons coconut oil
- 2 tablespoons maple syrup
Strawberries, to serve
Method:
- Make the topping: Melt the cocoa, coconut oil and maple syrup and stir until smooth. Set aside.
- Make the pikelets: In a blender (or you can beat it all in a bowl) add all ‘pikelet’ ingredients, including the Vitasoy Soy Milky Lite, and blend until smooth without lumps.
- In a frypan on high heat, spray with oil and drop 2 level tablespoonfuls of the batter mixture into the pan and cook until bubbles appear on the surface.
- Flip to the other side for another 30 seconds or so until just browned. Set aside. Continue frying until all of the batter is used.
- Stack the pikelets and add a light layer of chocolate topping between each layer. Serve with strawberries and enjoy!
