We all put on weight in winter, when greasy comfort food becomes the order of the day. To maintain weightloss through winter remind yourself of the fabulous flavours of light food and experiment with new recipes to keep things interesting. Try this simple and succulent recipe for Thai Beef Salad from Lose Baby Weight’s new book, the 28 Day Diet and Exercise Plan.
Thai Beef Salad Recipe
Serves 1
Ingredients:
200g beef fillet, sliced
1 tbsp fresh lime juice
1 tsp fish sauce
1/2 tsp sesame oil
1/2 tsp tamari sauce
1 tsp finely grated fresh ginger
1/2 garlic clove crushed
1/2 tomato, sliced
1/4 cucumber, thinly sliced
1/4 red onion, thinly sliced
1/2 fresh red chilli, thinly sliced
1 bunch fresh mint, leaves picked, large leaves torn
1 bunch fresh coriander, leaves picked.
Method:
Whisk together lime juice, fish sauce, sesame oil, tamari, ginger and garlic in a jug. Place the steak in a glass or ceramic dish. Drizzle with half the dressing. Preheat a barbecue grill or chargrill pan on high. Cook steak on grill for 2-3 minutes each side for medium or until cooked to your liking. Transfer to a plate to rest. Place the tomato, cucumber, onion, chilli, mint, and coriander, in a large bowl. Thinly slice steak and add to the salad.
Drizzle with remaining dressing and toss gently to combine.
