You’re going to be the favourite in the family or even with friends with this dairy-free strawberry ice cream slice by Scott Mathias. Not only is it healthy, but it is absolutely delicious and it’ll have everyone wanting more. What’s even better is, you can replace the strawberries with any of your favourite fruits.

Ingredients for the base and top:
2 cups coconut flakes
16 medjool dates, pitted
4 tablespoons coconut oil, melted
½ cup flax meal, ground linseeds
1 teaspoon cinnamon
¼ teaspoon salt
1 teaspoon vanilla essence
1 teaspoon coconut palm syrup
Ingredients for the ice-cream mix:
4 frozen bananas
½ punnet fresh strawberries, hulled and washed
3 tablespoons nut butter, almond, cashew or peanut
2 tablespoons dried banana, finely chopped
1 teaspoon vanilla essence
1 teaspoon coconut palm syrup
Method:
For the base and top: combine the ingredients thoroughly and spread half of the ingredients and press into the base of a square tart tin. Place into the freezer until frozen. Set aside the balance.
For the sandwich mix: blend all the ‘mix’ ingredients together thoroughly and stir in the finely chopped dried banana. Pour into the frozen base and level out. Place in the freezer until frozen. Remove and spread the balance of the base mix, spreading to edges and levelling of. Once again, return the tray to the freezer. When ready to slice, remove from the freezer and allow to sit in the open air for 10-15 minutes before slicing to preferred size.
